Recipe of The Week | Red, White, and Blueberry Salad

 

Prep Time 10 min | Serving Size 1 | 21-Day Fix Containers – 2 Green – 1 Blue – 1 Orange – 1 Oil – 1 1/2 Green

2 cups spring mix and spinach, combined
1⁄4 cup crumbled feta cheese
2 tablespoons walnuts
4-5 fresh strawberries, sliced
1⁄4 cup fresh  blueberries

Optional: 3oz of skinless chicken breast (21 Day Fix – 1 Red)

Place the salad greens in your favorite salad bowl.
Pile the feta and walnuts in the middle of the salad.
Add the strawberries and blueberries on top.
Serve with your favorite Raspberry Vinegarette (I love Wishbone Raspberry Hazelnut) dressing on the side, and not until ready to eat so that it will not wilt the salad.

Healthy Chicken Carbonara

Ingredients

oz cooked whole-wheat spaghetti

slices bacon, cut into 1-inch pieces

 medium garlic clove minced
1 egg  and 1 egg white 
12  cup  parmesan cheese
12  tsp salt
14  black pepper
Top with chopped basil leaves to taste.
Serves 4; Prep Time 15 minutes
  • Cook spaghetti as directed drain and keep warm.

  • Meanwhile cook bacon in large skillet over medium heat until crisp

  • Add garlic and cook stirring constantly until fragrant about 30 seconds

  • Whisk egg and egg white in a small bowl

  • Add spaghetti to skillet, remove from heat add eggs, parmesean cheese and salt and pepper toss to coat.
